Shake-It-Yourself Butter

You can turn cream into real butter using nothing but a jar and about six minutes of shaking. It works every single time, which is the best part.

Shake-It-Yourself Butter

Step 1 of 6

Pour the cream into the jar until it is about half full. Leave the rest as air.

The air space is doing real work. A full jar has nothing to slosh into and barely churns.

Why that works

Cream is millions of tiny fat droplets floating in water, each wrapped in a thin membrane. Shaking smashes the droplets into each other hard enough to break those wrappers, and the freed fat clumps together. Butter is just fat that got tired of floating.

Lambton County twist

Cream from a Lambton County dairy churns noticeably yellower in summer, when the cows are out on grass.
